Summer Dreams
“Summer Dreams” was the topic of Laura Harker’s cookery demonstration given before 15 members of Asby WI and two guests in August. Laura previously had visited Asby WI on a number of occasions, each time with a different theme. On each visit she provided a delicious spread of goodies for members to sample over their evening cups of tea and this time was no exception.
It was obvious that Laura had spent much time preparing for her visit for, with most of her recipes, after detailing ingredients, she was able to put the finishing touches to no fewer than six tempting summer desserts and cakes. Starting with a sorbet made using a smoothie in her ice-cream maker, she progressed to completing ramekins of rhubarb and ginger syllabub; strawberry and cream shortcakes; Black Forest chocolate cupcakes; a lemon meringue roulade, and, finally, a lime and coconut cake. Members didn’t need much encouragement to sample these delights when she had finished. They were pronounced ‘Very good!’
WI Secretary, Jackie Smart, gave the vote of thanks while Carol Smith and Helen Cooper provided teas, coffees and yet more to eat! The raffle was won by Helen Horn. The competition for a home-made biscuit which was judged by the speaker was won by Christine Forrest, second – keeping it in the family – Rachel Forrest
